Ingredients (1 person):
  • 1 kg mussels
  • 150 ml white wine
  • 1 bunch celery
  • 1/2 chilli pepper
  • 2 limes
  • 5 tablespoon of extra virgin olive oil
  • 1 clove of garlic, finely chopped
  • 1 ripe avocado
  • 75 g rocket
  • 1 red onion, in rings

Avocado salad with mussels

Ingredients (1 person):
  • 1 kg mussels
  • 150 ml white wine
  • 1 bunch celery
  • 1/2 chilli pepper
  • 2 limes
  • 5 tablespoon of extra virgin olive oil
  • 1 clove of garlic, finely chopped
  • 1 ripe avocado
  • 75 g rocket
  • 1 red onion, in rings
  1. Check the mussels: throw away shells that are broken or that do not close after a firm tap. Put the mussels, wine and celery into a large, high-sided pan. Grind a generous amount of pepper over it. Boil the mussels covered for 6-8 minutes or until all of the shells are open.
  2. Remove the seeds from the chilli pepper and then finely chop the pepper. Make a dressing by beating the juice of 1 lime, the olive oil, the chilli pepper and the garlic. Add salt and pepper to taste.
  3. Cut the avocado in half, take the seed out of the flesh and peel the avocado. Cut the avocado into strips. Immediately sprinkle the flesh of the fruit with the juice of the last lime.
  4. Divide the rocket with the mussels (in the shells), the avocado and onion rings over 4 plates. Sprinkle the dressing over the plates. Tasty with multi-grain baguette or crispy buns.TipĀ You can also serve the avocado salad as a cocktail. This salad is sufficient for 12 people when poured into small cocktail glasses.
