Stir-fry with noodles and mussels

Ingredients (1 person):
  • 2 spring onions
  • 2 cloves of garlic
  • 2 cm fresh ginger or
  • 1 teaspoon of ginger powder
  • approximately 125 g pods
  • ½ yellow and ½ red pepper
  • ½ cucumber
  • 1 lime
  • 1 kg mussels
  • 2 tablespoon of cooking oil
  • 3 to 4 tablespoons of light soya sauce
  • 150 g stir-fry noodles

Stir-fry with noodles and mussels

Ingredients (1 person):
  • 2 spring onions
  • 2 cloves of garlic
  • 2 cm fresh ginger or
  • 1 teaspoon of ginger powder
  • approximately 125 g pods
  • ½ yellow and ½ red pepper
  • ½ cucumber
  • 1 lime
  • 1 kg mussels
  • 2 tablespoon of cooking oil
  • 3 to 4 tablespoons of light soya sauce
  • 150 g stir-fry noodles
  1. Cut the spring onions into sections of 1 cm.
  2. Finely chop the garlic and ginger.
  3. Clean the pods, cut the pepper into strips and the cucumber into slices.
  4. Wash the mussels in cold water. Check them and remove any that are broken.
  5. Bring water to the boil in order to cook the noodles.
  6. Stir-fry half of the garlic and ginger in a frying pan with 1 tablespoon of oil until glassy.
  7. Add the pepper and pods and briefly stir-fry them until they are crispy.
  8. Finally, add the cucumber and the soya sauce
  9. Cook the noodles in accordance with the instructions.
  10. In the meantime, fry the spring onions with the rest of the garlic and ginger in a large wok with 1 tablespoon of oil until glassy.
  11. Add the mussels, the lime juice and half a glass of water.
  12. Cover the mussels, bring to the boil and shake them until they open.
  13. Mix the vegetables through the mussels.
  14. Serve the noodles separately or mix them in.
