Pasta salad with mussels

Ingredients (1 person):
  • 250 g spaghetti
  • 1 kg boiled mussels
  • ½ cucumber
  • 2 tomatoes
  • 1 stick of celery
  • 4 to 6 basil leaves
  • 4 tablespoons of olive oil
  • 2 tablespoon of white wine vinegar
  • 1 tablespoon of mayonnaise
  • Pepper and salt
  • 1 tablespoon of capers
  • ½ bag of rocket salad
  • Main course

  1. Boil the spaghetti in accordance with the instructions on the packaging and rinse it in cold water.
  2. Take the boiled mussels out of the shells and leave a few in the shells for the garnish.
  3. Peel the tomatoes. Cut them into four pieces, remove the seeds and cut the flesh into strips.
  4. Cut the cucumber into cubes, the blanched celery into thin slices and the basil into thin strips.
  5. Mix all of the vegetables and the basil with the pasta.
  6. Add olive oil and vinegar to taste.
  7. Add the mayonnaise and the capers and add salt and pepper to taste.
  8. Finally, mix in the mussels and the rocket.
  9. Serve the salad in a dish and garnish with the mussels in the shells.
